Pandemic priority: DTI wants Via Mare-led group to decide how adobo should be cooked

The Department of Trade and Industry (DTI) wants a group led by Via Mare restaurant founder Glenda Barretto to standardize the cooking techniques for popular Filipino dishes such as adobo, sinigang and lechon.

DTI’s Bureau of Philippines Standards (BPS) said in a statement that standardizing the cooking technique for adobo “will help preserve the country’s cultural identity despite the variations made to it.”

“Standardizing the basic cooking technique for Philippine adobo will help ordinary citizens, foodies, and food businesses determine and maintain the authentic Filipino adobo taste,” said BPS director Neil Catajay.

BPS said the Barretto-led group will take into consideration the variations in cooking techniques observed in cooking adobo in the Philippine national standards (PNS) that will be formulated about the dish.

While the commonly known adobo recipe uses soy sauce, vinegar and pepper, variations include adding coconut cream/milk, atsuete or laurel.

Aside from standardizing the recipe for adobo, BPS said the committee plans to include Filipino dishes such as sinigang, lechon, and sisig to their work program.

The BPS said the draft PNS on adobo will be circulated nationwide for review and comments once they are available.

Joining Barretto in the committee are Chef Myrna Segismundo and Chef Raoul Roberto Goco from Food Writers Association of the Philippines (FWAP) and Hotel and Restaurant Association of the Philippines (HRAP), respectively.

There will also be representatives from the University of the Philippines Diliman – College of Home Economics (UPD-CHE), Philippine Chamber of Food Manufacturers, Inc. (PCFMI), Philippine Association of Meat Processors, Inc. (PAMPI), Department of Science and Technology – Industrial Technology Development Institute (DOST-ITDI), Philippine Association of Food Technologists, Inc. (PAFT), Le Toque Blanche (LTB) Chefs Association, Asia Society Philippines, National Commission for Culture and the Arts, and Philippine Daily Inquirer, Inc.
